Recipe: Super delicious sausage rolls

These super delicious Sausage Rolls are so tasty, juicy and easy to make; just stir everything together and bake! They are much much healthier than shop-bought versions and are a staple on family picnics as they can be eaten hot or at room temperature.

In winter as a treat we put a picnic mat by the fire and have an ‘eat-with-your-fingers’ picnic dinner. This has given us a lot of joy during the long lockdown winter months. In summer the kids love an after school walk and picnic dinner in the woods.


It means less work and mess for me too so I’m happy. For those with fussy kids this is a great option as normally the most exciting thing for kids is to eat NOT at a table!


To demonstrate how easy they are to make, I've enlisted my little helper to show the step-by-step instructions. The recipe below serves 4, as part of a picnic/lunch (makes 16 small rolls).


Ingredients:

For the filling:

400g pork mince (not lean). You can also use beef or lamb or a mixture of minces

1/2 tsp all spice

2 tsp ground cumin

1 1/2 tsp baharat

2.5 tbsp barberries or finely chopped cranberries (read more about barberries here)

1/2 onion, grated

100g feta, crumbled (optional)

2 garlic cloves, crushed

1 tbsp tomato puree

1 tsp flaked sea salt


For the rolls:

1 x 320g ready rolled All Butter puff pastry

1 large egg yolk

1/2 tbsp white sesame seeds & 1/2 tbsp black sesame seeds


If you can’t find certain ingredients leave them out or replace them with another spice (such as zaatar/sumac/chilli etc) and it will still be delicious (they are great without the sauce too).


Step 1

Preheat the oven to 200c. Prepare a large tray with baking parchment. Mix together the filling ingredients in a bowl (gloved hands are best).

Step 2

Cut the puff pastry in half length ways (giving you two long strips).

Step 3

Spread half the pork mixture into a long sausage shape and place on one side of a piece of puff pastry. Brush the free edge of the pastry with a tiny bit of egg yolk.

Step 4

Fold over the pastry and roll it up, overlapping the pastry slightly to stick together, finishing seam side down.

Step 5

Brush the pastry all over with half the egg yolk, sprinkle with black sesame seeds and cut into 6-8 pieces with a serrated knife.

Step 6

Place them onto the prepared tray and continue in the same way with the remaining pastry and filling finishing with the sesame seeds. Bake for 20 minutes, or until golden.
